What's your favorite soup recipe?

Getting bored with my usuals.

I always boil down a chicken carcass and start there, but it always comes out greasy.

there's lots of good and easy potato leek soup recipes on line. had one the other night that was delicious.

Yeah, I make broth from carcasses at least a few times a month. You can cool it down and scoop off the grease.

chicken brie soup -

adjust for however many people you are feeding
I put this in the crock pot for a few hours the longer it goes the better, but it's good as soon as the carrots are soft. It goes great with whole wheat rolls/butter

chicken breasts
carrots - rough chopped
celery - rough chopped
s & p
brie - i use a whole log - put half in to start and hold half back until the last 15 minutes or so
fresh spinach - add in last 15 minutes with 2nd half brie

this was killer, i altered it a little - pureed 2/3 of the soup to make it thicker before adding the milk & clams, and added a roasted poblano pepper for some kick.

also we now make our own vegetable stock from all the scraps we don't use before we compost it. just put all that shit in a bag in the freezer until you have enough to fill a pot, then boil the shit out of it, strain it and fill ice cube trays. we use almost everything compostable, except you want to stay away from any citrus fruits, bananas, and avocado peels. I'm sure i'm forgetting something else to avoid, but we make this stuff out of almost everything - onion peels, egg shells, apple cores, potato peels, carrot skins, pepper cores, seeds, pumpkin guts, etc etc. Makes me feel like such a hippy.

I diced and stir fried a zucchini and an onion with some ginger. I cooked down some kale and tomatoes and threw in some chick peas, cummin and chili powder. After it had simmered for about half an hour, I put it through the food processor. Good stuff.

If you are tired of the monotony of cooking. Try to diversify your meal with this pea soup. Split pea soup is definitely one of my favorite.
